Garlic Scape Pesto

Ingredients
1/4 pound garlic scapes, cut into 1 inch pieces
1/2 cup olive oil
1 tablespoon pine nuts or almonds, toasted
1/4 teaspoon gray salt or sea salt
1/8 teaspoon fresh pepper
1 tablespoon grated Parmesan
Optional: add a little fresh basil
 
Directions
Bring a pot of salted water to a boil. Add the scapes to the water for about 5 seconds. Remove and shock in a large bowl of ice water to stop the cooking. Dry by patting with a towel. In a blender, mix the basil, garlic scapes, and olive oil. Add the nuts, salt, and pepper, and continue to blend. When smooth, add the Parmesan.

Place in a bowl and cover with plastic wrap - press the plastic down so that there is no air to avoid discoloration.  Store in the refrigerator.
